This is our first year and first Spring in our new house enjoying the bounty of God’s blessings. Each new day is a surprise finding new flowers sprouting up from a long winter sprouting as the sun visits.

Jeff scored a FREE top of the line Char-Broil BBQ on the Portland Craigslist last week, works like a charm and turns out some great grilled grub. Now that the weather has been consistently nice, we have taken advantage of it and started to grill almost every night. Grilling is quicker than cooking indoors, healthier, and cheaper because we aren’t wasting any food. Another cool item new to us is our grill basket; a metal square shaped basket that has holes on the bottom that sits right on top of the grill without losing small contents such as cut up vegetables or shrimp.

Sunday night of Memorial Day weekend we bought a pound of Salmon (recipe to follow) that was on sale at our local grocery store, with some fresh vegetables ( artichoke, yellow squash, and red potatoes). The meal turned out great and was one of the best meals I have ever had!

This weekend was the kick-off for the annual Rose Festival here in Portland Oregon! We couldn’t have asked for better weather, it has been steadily in the upper 70’s with cool summer like nights. Below is a little more about the Portland Rose Festival and why it’s so important to Oregonians around the state.

The Portland Rose Festival is an annual festival held during in late May, early June in Downtown Portland Oregon! It is organized by the volunteer non-profit Portland Rose Festival Association with the purpose of celebrating the Portland region. Since 1930 a queen has been selected from a court of high school seniors from each school in the Portland/Metro area where a college scholarship is awarded to a 14 members of “royalty”. During Fleet Week of the Rose Festival; boats from United States Navy, Coast Guard, Army Corps of Engineers and the Royal Canadian Navy dock along the seawall of Tom McCall Waterfront Park. In past years Portlanders were allowed to tour the ships and meet the fleet of the boats, but because of safety precautions, touring the boats are no longer an option. The festival also hosts a Champ Car race at Portland International Raceway, Dragonboat races on the Willamette River, The Starlight Parade showcasing floats covered in lights, and The Grand Floral Parade where floats are decked out in only organic materials such as flowers, grains and seeds. A fireworks display kicks off the week on opening night of the Festival with Carnival rides along the Portland waterfront, among other events and festivities!

*Jeff and I set out for opening night downtown Friday on the waterfront to enjoy the wonders of opening night and what Portland spirits really have to offer. Admission to the festival was FREE because it was opening night, we enjoyed food, carnival rides, and looking around at local vendors selling homemade items. It was great, and to top off the night there were fireworks where the whole community stood around on the waterfront to watch the kick-off display.
